I first met Josue Bonilla in 2023 at a coffee exhibition in Doha. From that day, our conversations often circled back to one shared passion the art and science of coffee processing.
In 2024, I shared exciting news with him: DNRT Coffee Project was working on a new post-harvest processing initiative called “Hypoxia.” This wasn’t just a project it was a global movement, uniting good friends and family from Costa Rica and beyond.
Josue, along with his brother Pablo from Café Don Mayo, stepped in with enthusiasm to collaborate on this worldwide effort. Together, we’ve been exploring new possibilities in coffee, pushing boundaries while honoring tradition.
Now, we’re thrilled to share the results of this journey with the world a testament to friendship, collaboration, and the endless potential of coffee.
