Hypoxia is a condition with less of oxygen that we are applying during pre-cleaning and gravity sortation by water. Its originally purposes to optimized nutrition absorbing while eliminating pest and insect from coffee cherry to showcase the terroir itself.
Following with hermetically sealed anaerobic fermentation with target pH 3.8-pH 4 to maintain the acidity. Then controlled coffee temperature on drying phase to optimize density of this coffee.
